Baby, it’s cold outside! The thermometer is sitting at 10 degrees right now. This is the perfect time of year for a hot and healthy breakfast! Here’s an easy breakfast recipe I adapted from one I found online after eating something similar at a Bed and Breakfast a while back.
Like a lot of my recipes, this one is pretty easy to adapt to your own tastes….I added 1/4 cup mashed bananas in place of the oil. Feel free to experiment!
BAKED OATMEAL
(serves 4)
INGREDIENTS:
1 egg slightly beaten
1 1/2 cups regular or steel cut oats
1/3 cup sugar
1/2 cup fat free milk
3 T canola oil
1/4 chopped nuts (any kind)
1/4 cup raisins or any dried fruit chopped into raisin-sized bits
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
DIRECTIONS:
Pre-heat oven to 350 degrees. Combine all ingredients in a bowl. Spray 8 inch square baking dish with cooking oil spray (or use individual ramekins, sprayed). Pour combined ingredients into prepared pan and press down slightly.
Bake for 25 minutes. Cool for 15 minutes, then cut into squares. Serve with vanilla yogurt on top for an extra treat!
