Can you believe it’s the holiday season already? I have so many great recipes to share, I just can’t wait to get them all on my blog for you to try. I have a delicious french toast casserole that’s a family favorite for breakfast gatherings. Also my white chicken chili is another holiday hit and I know you are all waiting patiently for that recipe. I promise I’ll post it soon!
But first let’s go for dessert…My Arizona Sunshine Buddy, Deborah, requested this one:
Chocolate Bourbon Pecan Pie
makes 1 pie
Ingredients:
1 deep dish pastry shell (either home-made or store-bought)
3/4 cup white sugar
1 cup light corn syrup
1/2 cup butter
4 eggs, beaten
2 T bourbon
1 tsp vanilla
1/4 tsp salt
3 oz semi-sweet chocolate chips
1 cup chopped pecans
Directions
Preheat oven to 325 degrees F
In saucepan combine sugar, corn syrup and butter
Cook over medium heat, stirring until butter melts and sugar dissolves. Cool slightly.
In a bowl combine eggs, bourbon, vanilla and salt. Mix well.
Pour cooled sugar mixture slowly into egg mixture, mixing well
Add chopped pecans and continue mixing
Pour chocolate chips into bottom of pie shell
Slowly pour sugar/pecan mixture into the pie shell
Bake in preheated oven for 55 minutes. Test for doneness by inserting a thin knife tip into center of pie. If it comes out cleanly, pie is done.
Serve warm or chilled with vanilla ice cream or whipped cream.
